Tomato and Paneer Pulao

 
Tomato and Paneer pulao.


Ingredients:

Rice 2 cups(Basmati)

Tomatoes 2 big ones

Paneer cubes 1 cup

Cinnamon (2 inch stick)

Star anise 1

Bay leaf 1

Elachi 1

Onion 1

Cloves 2

Salt to taste

Ghee 1 spoon

Coriander seeds 1 spoon

Cumin seeds 1 spoon

Fennel seed 1 1/2 spoon

Ginger garlic paste 1 spoon

Green chillis (adjust) 2

water 3 1/4 cup

Process:

1.In a vessel heat ghee , add bay leaf, 1 clove, 1 elachi, star anise and 1 inch cinnamon stick and fry for few secs.

2. Add  onions and fry until they become transperent.

3.Add ginger garlic paste.

4.. Add the chopped tomatoes, and fry until they become soft.

5..Add Paneer cubes and chillies

6.Roast coriander seeds,cumin seed,fennel seeds.

7..Add 1 clove,1 inch cinamon stick ,1 Elachi and grind with all the above roasted ones

8.Add this powder and salt.

9.. Finally add rice and fry for 2 mins.

10..Add water and transfer to rice cooker.

11.Garnish with coriander ,Grated Paneer and serve with riatha.

Aloo Capsicum fry

 
 
Aloo capsicum curry...


Ingredients:

Aloo/Potato 4


Capsicum 2

Ginger small piece(1  1/2 inch)

Onion 1

Chilies 4

Mustard seeds 1/2 spoon

Jeera 1/2 spon
 

Urad dal 1/2 spoon

Chana dal 1/2 spoon

Turmeric,hing  a pinch
 

Cilantro for garnish
 

Salt to taste.


Procedure:

1.Boil aloo by adding salt.

2.Peel the potatoes after they become cold

3.In a vessel add some oil following with mustard seeds,jeera,urad dal and chana dal,hing.

4.Add turmeric and then ginger,chilli paste.

5.Add onions and fry them until they become transperent.

6.Add Capsicum peices,fry them until they become little soft
 

7.Finally add boiled  aloo and salt
 

8.Garnish with cilantro

Aloo Palak Pulao..

Potatao...impressive nutritional content including being a rich source of fiber, potassium and vitamin C

Ingredients:

Aloo/Potato 1

Palak 2 cups tightly packed

Onion 1

Cinamon 1 inch peice

Elachi 2

Cloves 2

Star anise 1

Biryani leaf 1

Ginger garlic paste 1 spoon

Garam masala 1 spoon

Red chilli powder 1 spoon

Salt to taste

Ghee 2 spoons

Rice 2  1/2 cups

Cilantro for garnish.

water 4 1/2 cups(As Potatoes are there it need more water)

Procedure:

1.In a vessel,add ghee and saok rice in water.

2.Add Cinamon,Elachi,star anise,cloves and fry for 2 mins..

3.Add onions and let them become Transperent.

4.Now add Ginger garlic paste and potato pieces.

5.Let them fry for 5 mins and add palak leaves..

6.Add chillipowder,salt and garam masala

7.Add rice and fry for 2 mins.

8.Now Add water and transfer to rice cooker.

9.After it is done Garnish with Cilantro.

10.Serve hot with raitha

Elachi powder a pinch.


Procedure:

Cherry Lemonade



Cherry Lemonade..
Can be made sweet or sour .....whatever taste  you like..Refreshing summer drink...

Igredients:

Cherries..8 to 10.

Sugar 3/4 cup

Lemon juice 1/4 cup

Cold water  4 cups.

Mint for garnish

Process:

1.In a  vessel mix  1 cup of water and sugar.

2.Let it boil for 10 mins and becomes like syrup.

3.Add cherries and let them boil in sugar syrup for 10 mins.

4.Remove from heat and let it cool.

5.Squeeze/press the cherries to  get the juice and strain it.

6.Add remaining water and lemon juice to this concentrated juice.

7.Garnish with Mint and Cherries.

Maggi snack

Maggi snack..


A time pass snack...Prepared with Maggi noodles...


Ingredients:


Maggi 1 pack

Groundnuts 1/2 cup

Poha/Atukulu 1/2 cup

Soaked moong dal 1/2 cup.


Water 1 1/2 cup

Oil for deep fry.

Salt to taste


Chilli powder 1 spoon.


Procedure:

1.Boil maggi with water and keep aside(dont add masala).


2.Deep fry Maggi.Groundnuts,poha,soaked moong dal one after one.


3.Mix all of them along with salt and chilli powder.

Apple and Dates Halwa




Apple and Dates halwa without sugar.

Sugar  Free sweet...Using Natural sugar in the form of dates.

Ingredients:

2 Apples

6 dates(Increase according to ur taste)

Milk 2 cups.

Elachi 2

Ghee 2 spoons

Nuts 

Procedure:

1.Grate or Grind Apples.

2.Grind dates with little milk

3.In a vessel  heat ghee, add grated appleand dates  paste.

4.Add milk and let it cook for some time on meduim heat.

5.When the halwa leaves the vessel add elachi powder and nuts..
6.Remove from heat,Garnish with dates.

Atakula(poha) laddu





              
Atukula (poha) ladoo along with roasted ground nut gives good taste.

Ingredients:

Atukulu(poha) 6 cups
Sugar 1 cup(varies  according to your taste)
Jaggery 1/2 cup
Elachi 4
Roasted ground nuts 1/4 cup.
Ghee 1/2 cup
Dry fruits

Procedure:

1.Dry roast Atukulu(poha) and util they turn light brownish colourd and become crispy.

2.Grate jaggery,and grind  along with sugar, fried poha and ground nuts

3.Add elachi powder,Dry fruits and  ghee.

4.Make them into ladoos

Almond Basundhi


Almond Basundhi..a rich sweet.Takes much time to prepare but tastes good.

Ingredients:

Milk 6 cups
Condensed milk 6 spoons
Almond powder 1/2 cup
sugar 1/4 cup
almonds for garnish
elachi 3


Process:

1.Boil milk in low flame for 10 mins.

2.Add Condensed milk,sugar and let it boil for 20 mins..

 3.Milk should become thick...later add badam powder and elachi..

4.Stir in the middle...it should become like a thick paste.Its  more time taking process...but tastes good

5.Garnish with almond flakes....Tastes good when it is chilled...

Chekodi(RIce Flour Snack)


Chekodilu...Cruchy snacks which are Famous in Andhra...

 Ingredients:

1 cup rice flour
1 cup water
2 tbsps yellow moong dal.
1/2 tbsp cumin seeds
1 tsp red chilli paste
salt
oil


Ingredients:

1 Boil water, add salt, ghee and moong dal(Soak for 30 mins). Add the rice flour, stir it and  turn off heat immediately.

2 After it becomes cool, add chilli past,  cumin seeds ,salt and Knead the dough till smooth.

3 Make a small lemon size ball of the dough and roll into a thick rope which is approx 34 inches in length and form a ring

4.Prepare chekodis folllwing like wise.

5.Heat  oil in a vessel once the oil is hot, place the chekodis one by one into the hot oil, you will find the oil froth up in bubbles.

6.cook the chekodis till they turn a golden shade and should be cooked on medium flame to get crispness. It does take a while to fry the chekodi.

7.Store in an air tight  container.

Banana Milkshake with Soymilk


Banana Milk Shake with Soymilk....

Soymilk Contains only Proteins and no lactose.Helps in reducing  cholesterol.Tastes good when mixed with Banana.

Ingredients:

Banana 1(big one).

Soymilk(VanillaFlavour ) 3 cups.

Vanilla Icecream 2 table spoons(Optional).

Sugar/honey 2 table spoons.

Choclate Syrup (optional).

Process:

1.Blend all the Above Igredients  except Choclate Syrup.

2.Have used choclate syrup  for decorating the glass..

3.Pour the Milkshake in the glass.

4.Tastes good when Soymilk is chilled .

Bread and Egg Halwa



Bread and Egg halwa...Decorated as Indian Flag..

Ingredients:

Bread slices 6

Eggs 4

Milk 4 cups

Elachi  3


Cinamon stick 1 inch piece

Badam Powder

Food colours green and orange(optional).

Procedure:

 1.In a vessel beat egg and sugar.

2.Soak bread  in milk,it becomes soft .

3.Mix all the above  in one vessel.

4.Keep a vessel on stove and add some butter.

5.After butter is melted,add cinamon stick and then the above mixture.

6.Cook on low flame until it leaves the surface.

7.Add elachi,badam powder and Divide the halwa into 3 portions..

8.Add orange and green colour to two portions and other remains  white.

9.Arrange as Indain flag..fianlly garnish with star anise which  resembles the  chakra.

Vegetable Adai


Celebrate INDEPENDECE DAY  with Vegtable Adai,Which is  famous in Chennai,Prepared with dals(Chanadal/senagapappu,Tualrdal/kandipappu ,Moongdal/Pesarpappu ,Urad
dal/minpappu and rice).It is good for health as it has all dals.Becomes very heavy..so Prefer as brunch or lunch even.


Ingredients:


Bengal gram/chana dal.  1/2 cup
Tuardal 1/2 cup
Moong dal  1/2 cup
Urad dal 1/2 cup
Rice 1/2 cup
Capsicum 1
Carrot 1
Ginger 1 inch peice
Cilantro


For chutney:


Tomato 2
Groundnuts 1 cup
Coconut 1/2 cup
Red chilli 1
Green chilli 2
Salt to taste
Ginger small piece


Seasoning for both:


Mustard 1 teaspoon
Urad al 1 teaspoon
Jeera 1 teaspoon
Hing  a pinch
Curry leaves


Process:


1.Soak all the dals and rice overnight.


2.In the Morning Grind dals,rice,ginger,chilli and capsicum.


3.To this batter add seasoning and salt


4.Add Grated Carrot,Coconut ,Capsicum and Cilantro.


5.Heat tawa and pour batter on it..spread like dosa..sprinkle..grated carrot,capsicum and coconut.




Chuntey:


1.Take 2 spoons of oil in a vessel and add tomatoes to it.


2.Fry until they become soft and then add grated coconut.


3.In a separte vessel raost Groundnuts.


4.Add  ginger,chillies to tomato,ground nut,coconut and grind them using little water.


5.Add Seasoning to it.




Garnish with Carrot(Saffron),Cocnut(white) and Capsicum(Green) which Resembles indian flag..

Carrot Juice

    
Carrots are good for eyes and skin which contains vitamin A.People who won't like the raw flavour of carrot.,try this juice with Elachi.Taste of Elachi takes away the raw smell of carrots.Have learnt this from my Mother..

Ingredients:

Carrots 2

Elachi 2

Milk 4 Cups

Suagr 3 table Spoons.

Process

1.Chop carrots into small peices to reduce strain to ur mixer.

2.Grind carrot along with elachi and little amount of water.

3.Grind it to fine paste...Strain the juice and then add milk.

4.Depending upon your taste add some more milk..

5.Serve chilled.

Eggless Steamed Banana Cake



                      
 Eggless Steamed Banana Cake,Perfect for vegans.. and no baking required.


Ingredients:


 All Purpose Flour/Maida  1 cup .
 Water 3 Tbsp
 Ripe Banana 1
Olive/Cooking  Oil 2-3 tsp
Baking Powder 1 tsp
Sugar 1/3 cup
Almonds  10 to 12


Process:


1. Blend mashed banana, oil and water. Pour this mixture into the flour and mix well. 


2.Pour this mixture in a greased and dusted dish(with flour) and place in a steamer. 


3.Different ways of steaming
  •    In an idli cooker, pour water and place a steel container with the batter.
  •    Use the pressure cooker without the whistle .

4.Add Almonds on the top of the cake and steam for 40 to 45 mins.


5.Check by dipping a knife or a spoon into the batter,if it comes out clean cake is ready.


6.Remove from heat and let it cool for 5 mins


7.Then run a knife through the edges and tap the container all over and invert it onto a plate.


Note:
1.If you are using ripen banana, use less sugar.


2.Don't blend too much after adding flour,this may harden the Cake.

Coriander/Cilantro Rice..

          
Coriander Rice.. One Pot Meal and .Alternative for Veg pulao.Can be Served with Raitha.

2 cups rice soaked in water for 30 mins 
1 bunch of coriander washed and chopped
3 green chillis
5 tbsp grated fresh coconut
1" ginger piece
2 garlic flakes
2 chopped tomatoes
whole spices (5 cloves,2 green cardamoms, 1" pieces cinnamon-2,bay leaf)
salt to taste
2 tbsp ghee /butter.

1.Heat 1 tsp oil in a vessel and add the chopped coriander(kothimira)and green chillis 

2. Fry till rawness disappears approx 2 minutes.Remove from fire 

3.Grind the fried coriander and green chillis along with coconut,ginger and garlic to a paste adding little water.

4.Heat 2 tbsp of ghee (clarified butter) in a vessel

5.Add the whole spices and fry for a few seconds.

6.Add the  coriander paste and fry for 2 mins

7.Add the chopped tomatoes.Fry until rawness goes

8.Now add the drained rice and mix well and fry for 2 minutes.Add salt

9.Add 3 glasses of water and cook covered till done.

10.Garnish  with chopped coriander and Serve with raitha

Sunnundalu/Urad Dal Ladoo.

        

Sunnundalu...Traditional Sweet from Andhra..

This is a Nourishing sweet and made for special Occasions.


Igredients(To make 10 to 12):


Urad Dal  2 cups


Sugar powder/Jaggery  1 cup


Elachi Powder a Pinch


Dry coconut powder 1/3 cup


Butter/Ghee 1 cup(Can Increase Accordingly).


Process:


1.Dry roast urad dal on low flame.


2.It will take more time..


3.After they become light brown in colour, Remove from heat.


4Grind Urad Dal along with sugar/Jaggery.


5.Add Elachi Powder along with  dry coconut powder  to Urad dal powder


6.Remove  The Mixture into a  Vessel...Heat Butter or Ghee


7.Mix ghee and Powdered  Dal Mixure. Make them into Ladoos.

Microwave eggless Choclate cake

          

                      

Microwave  Eggless choclate cake..
   
   Easy  to prepare in less time...

 Ingredients:
1 cup condensed milk
 1/2 cup milk
1/2 cup butter (75 grams)
2 tbsp powderd sugar
1 cup Maida(All Purpose flour App 100 gms)
1/4 cup choclate syrup
3/4 tsp baking powdr
1 tsp  vanilla essence
3-4 tbsp chopped nuts (I used badam).
Strawberries and cool whip for garnish

Process :

1.Mix butter and sugar. Add condensed milk, milk and vanilla and beat the mixture.
2.Combine maida, baking soda, baking powder. 
3.Add to the nuts above mixture  and beat well. 
4.Grease a microwave safe deep bowl.Grease with butter and then with Maida. 
5.Pour batter and microwave for 5 minutes (only). Leave undisturbed for another 10 minutes.
6.Garnish with Whipping Cream,Strawberry chunks and Choclate syrup





Mango Kulfi

                          
Mango kulfi...


Easiest Desert to Prepare.. Dedicating this to my Friend Sameera..who loves it.

Ingredients:

Condensed milk  1 Tin

Evoparated Milk 1 Tin

Whipping Cream 16 Oz.

Cool whip  16 Oz

Elachi Powder    A Pinch

Mango Pulp 3 cups.(Depends on taste)

corn starch/flour  2  tea spoons

Badam Powder   3 table spoonss.


1.Mix  All the Above Ingredients...

2. Put the Mixture in Kulfi Moulds or bowls as Desired.

3. Let it set for  6 to 8 hours...may be overnight.

4.Remove from moulds....garnish with Badam flakes.

5.Enjoy Delicious Kulfi.


U can add strawberry Pulp instead of Mango Pulp to get strawberry kulfi.

Rasgulla

Rasgulla..famous sweet in Westbengal...My First recipe and Dedicating to my Sister in Law Radhika and Best Pal Sailu ...Both are Expecting...

Igredients:

4 cups of milk

3 tbsps lemon juice

2 1/2 cups water

1 cup sugar

pinch of Elachi Powder

3 tbsps of Sooji

Process:
1 Take a heavy bottomed vessel and boil milk. Once its boiled, add the lemon juice and the milk will curdle. Turn off flame.


2 Strain the curdled milk and add the chenna into a light cotton cloth. Gather the four corners of the cloth and twist it gently and rinse under cold water.Tie the ends and hang it at a height . Leave aside for 30 mts.


3 Remove the chenna onto a wide plate. Now knead it gently till there is no trace of moisture .Add sooji to this Chenna


4 Prepare the sugar syrup. Place a pressure cooker on the stove and add water and sugar and allow the sugar to dissolve.. Add a pinch of Elachi powder.


5.Make small balls of the chenna without cracks on the balls. Slowly add the balls to the boiling sugar syrup. Place lid and pressure cook upto 1 whistle .

6 Turn off heat. The balls will double in size . Serve them hot or chilled.
