Grilled sandwich with Guacamole(avacado dip).



Easy and quick sandwich which can be prepared using Guacamole.Here is my version of  grilled guacamole sandwich.Choose multi-grain bread ,provides you  more fiber and less sugar. It is also much tastier than white bread.


Recipe for Guacamole.

Ingredients:


Bread slices 2

Lettuce 1/4 cup

Tomato slices 2

Keera slices 2

Onion  1/4 cup

chilly 1(adjust)

Guacamole  1/3 cup.

Salt

Pepper powder.


Procedure :

1. Spread guacamole on bread slice.

2. On the top  keep ,keera, tomato ,onion.chillies along with  lettuce.

3. Add salt and pepper.

4. Grill the sandwich with  sandwich maker or on a pan(stove top).

Guacamole(Mexican Avacado Dip).

                
Guacamole , is an avocado-based dip that originated in Mexico.  It is traditionally made by mashing ripe avocados,eaten with tortilla chips.    

Ingredients :

       Ripe avocados 2

       Red onion 1/2 

       Chillies 1-2 

       Cilantro leaves 2 spoons

       Lemon juice 1 spoon

       Salt

       Black pepper powder a pinc

       Tomato pieces 1/2 cup


Procedure :


1. Cut Avocados in half. Scoop out avacado from the peel, put in a mixing bowl.


2  Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more.


3 .Keep the tomatoes separate until ready to serve.

4. Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.


5. Just before serving, add the chopped tomato to the guacamole and mix.

6. Serve with tortillo chips or can use  in a sandwich.

Doodh Peda with Almond,Dates stuffing

                                              
Happy Diwali friends .Celebrate diwali "festival of lights", Be SAFE. .May  you be blessed with sucess,Prosperity and all hapiness..Here goes the Peda with Almond and dates stuffing.

Ingredients :

2 cups of non fat milk powder(Grind it is powder)

1 can fat free condensed milk

8oz/16 tbsp unsalted butter

Elachi powder a pinch


Inner stuff:

Chopped Dates 1 cup

Honey 1 cup

Chopped almonds 1 cup

Procedure :

1.Melt butter in microwave safe bowl.

2.Mix milk powder and condensed milk,elachi powder with butter .

3.Cook in microwave for 5 to 6 mts ,mixing continuously after 2  minutes till milk powder completely mixes.

4.Cool the mixture to room temperature. 

5.On stove top,in a pan..fry choped dates for 5 mins.

6.Add honeyand fry for 5 mins or until it becomes sticky.

7.Add chopped almonds and fry for more 5 mins.

8.Prepare peda as flat base(circle shaped)..keep some  dates almond stuffing..and roll like peda.So peda will be ready with almond stuff inside.

Qubani Ka Meeta


Qubani (Apricots) ka meetha is a very popular Hyderabadi/Deccani Sweet dish which has been brought to India by the Mughal emperors. In Qubani Ka Meetha, Qubani a urdu word stands for Apricots in english and Meeta stands for sweet. Qubani Ka Meeta is a rich, creamy sweet.. Apricots are golden colored fruits with full of beta-carotenes, vitamin C and Vitamin A. Qubani ka meeta plays a very vital role in Hyderabadi Cuisine and is mainly served after spicy meal in weddings or parties.Its good for digestion..Apricots resemble dates and are less sweet than dates. Apricots become soft upon heating and can be easily mashed with hands.

Ingredients:

Dry apricots 1 lb(450 gms).

Sugar 1 lb to 1+1/4 lb(depends on ur taste).

Badam/Apricot kernels  for garnish.

Process:

1. In a vessel take apricots,pour water until apricots immerse.

2. Boil them until they become soft and mushy.

3. Let it cool and  remove the seeds from the apricots and set aside.

4. Using a strainer, strain out  apricot mixute. 

5. To this soft juicy puree ,add sugar and let it boil for  15 mins, until it becomes thick.

6.. It should  become slightly thick, should not become more thicker.

7.Add elachi powder.

8. In the meantime, break open the kernels from the seeds and soak them in lukewarm water to peel off the skin.

9. Finely slice the kernels and set aside(looks like small almonds),if not can use almonds.

10. Serve in a bowl with Kulfi and garnish with  Apricot kernels/almonds.

Garlic Flavoured egg fried rice

                             
Garlic is a sulphurous compound and in general a stronger tasting clove has more sulphur content and hence more potential medicinal value.Garlic makes a wonderful health supplement for many people  so-called "garlic cure".Here is fried rice using garlic.

Ingredients:

Boiled rice 3 cups

Eggs 3

Garlic 2 pods

Pepper 1 spoon

Mixed veggies 1 cup

Venigar 1 spoon

Aginamoto.tasting salt 1 spoon

Sugar 1 spoon

Soy sauce 1 spoon.

green chilli 1

salt to taste.

Procedure:

1.Boil the vegtables until they are half cooked.

2.Beat the eggs by  adding little pepper and salt.

3.In a vessel add this egg mixture and fry  it for 5 mins,

4.Fry unitl it  comes out as burji.

5.Make a coarse paste of garlic,pepper,salt  and chilli.

6.In a seperate vessel heat olive oil/sesame oil and added boiled vegetables.

7.Fry the veggies for 5 mins

8.Add the garlic pepper paste,soysauce, venigar,ajinamoto,sugar and fry for more 4 mins

9.Add rice ,prepared egg buriji and let it fry  for some time.

10.Keep high flame and mix well.

11.Adjust salt

Garlic and Moongdal soup

 

To partcipate in Vardini's event , herbs and flowers-Garlic i tried his garlic and moong dal soup.Garlic appears to have anti-bacterial and anti-viral properties.  when used as remedy list includes wounds, ulcers, skin infections, flu, athlete's foot, some viruses, strep, worms, respiratory ailments, high blood pressure, blood thinning, cancer of the stomach, colic, colds, kidney problems, bladder problems, and ear aches. Here comes a simple soup prepared in microwave or stove top..

Ingredients :

Garlic 2 pods.

Moong dal 1/3 cup

Water 2 cups

Pepper powder pinch

Coriander leaves chopped 2 spoons

Salt to taste

Procedure:

1.Soak moong dal for one hour

2.To this add 2 cups of water and boil in microwave for 5 mins.

3.Strain the  water and make  a paste of moong dal.

4.Add the paste to strained water .

5.Also add crushed garlic,salt,pepper and coriander leaves.

6.Again boil for more 5 mins.

7.Adjust salt and pepper

Jack fruit kesari

                                    
Unique for its size, delicious jack fruit is rich in energy, dietary fiber, minerals and vitamins. It contains no saturated fats or cholesterol, making it one of healthy fruit .Here comes Kesari with this fruit.

Ingredients:

Jack fruit pieces 1 cup

Sooji 1/2 cup

Ghee 1/4 cup

Sugar 1/4 cup

Orange colour pinch

Badam  peices 1/4 cup

Dates for garnish.

Procedure :

1.Fry Jack fruit peices in ghee for 10 mins.

2.Add water ,let it boil and add the orange colour.

3.Add sooji slowly and mix well.

4.Add sugar and almonds.

5.Let it become thick.

5.Garnish with jack fruit and dates.

Badusha/Baloo Sahi


Badusha is a sweet made of Maida and suagr which consists of layers.

Ingredients:

Maida 2 cups

Baking powder a pinch

Ghee 1/4 cup

Yogurt 1 cup (adjust)

Oil for deepfry

Sugar 1 cup

Salt

Water 1 1/2cup

Dry fruits.

Procedure :

1.Add Salt ,baking powder to maida and mix well

2.Add ghee to maida until it becomes like breadcrumbs.

3.Yogurt  is to be mixed until it becomes like layers.

4.Cover with wet cloth and  keep for 30 mins.

5.Make into small balls and press in the middle.

6.Deep fry in oil with  low flame until they become golden brown.

7.Prepare  thin sugar syrup and saok these badusha for 2 to 3 mins and  remove.

8.Dont keep for more time.Keep aside for  1 hour and garnish with dry fruits.

Bitter gourd fry

 

Bitter Gourds are very  low in calories  but dense with precious nutrients.Excellent source for B1,B2,Fiber,Iron.

Try this Bittergourd fry ..

Ingredients:
Bitter gourd- 4

Urad dal 1/4 cup

Ground Nut 1 cup

Chana dal -1/4 cup

Garlic 2 pods

Red chilli(dry)-7

Jeera 2 tbsp

Oil

Mustard seeds pinch

Salt

Red chillipowder

Coriander  big Pinch.

Hing a pinch




Procedure:

 1. Dry roast Ground nut,urad dal, chanadal ,Jeera,Corainder seperately.

 2. Add 1 spoon oil and roast dryy red chillies.

 3. Let them cool for a while

 4. Add garlic and grind all above ingredients into powder.

 5. Peel bittergourd  surface  which will have jagged ridges.

 6. Peel  completely.so that ridges are removed completely,should be like a plain surface which  helps in removing bitterness.

 7. Cut into very thin slices and deep fry them until they become crunchy.

 8. Now in a veesel,add 1 tbsp oil

 9. Add  pinch of mustard seeds,urad dal,chanadal and hing.

10. Add the grinded powder to it and let it cook until raw smell disapears

11. Add  fried bitter gourd peices and cook for more 5 mins.

12. Adjust salt and red chilli powder.

13. Serve with hot rice and  a dollop of ghee.

Apple and Almond Salad

                                                

Salad is one of the easy thing i prefer to make.Here comes with an quick and easy salad with apple.


Ingedients:

Apple 1

Almonds 1/2cup

Sugar 1/4 cup

Elachi 1

Whipping Cream 1 cup

Dates for Garnish

Process:

1.Chop the apple into small peices.

2.Grind almonds,suagr andelachito a fine powder.

3.Add badam powder and whipping cream to apple peices.

4..Garnish with dates.

Keera Lassi

                                   
Sorry for a loooong break....Will be continuing with interesting recipes...Back with refreshing Keera Lassi.. Fresh cucumbers are mostly composed of water, they still pack a lot of nutrition. 

Ingredients:

Keera - 1
curd - 2 cups
Saunf powder- 1tsp
Sugar-tsp
Mint Leaves for Garnish.

Procedure:

1.Grind all the above the igredients except  mint leaves.

2.Pour lassi in glass and garnish with mint leaves.

3.Serve chilled.

Papaya and Mint Salad

Ingredients:

Papaya (chopped) 2 cups

Mint leaves (chopped)  1/4 cup.

Coconut(grated)  1/2 cup.

Ginger(chopped)   half  pinch peice.

Honey 3 spoons.

Pista   8

Procedure:

1.Mix all the above Ingredients.

2.Garnish with Mint  and Pista.
